When I’m feeling sick, tired, or otherwise low, there are certain comfort foods that just sound better to me than anything else.  I don’t consider myself an emotional eater – that is, I don’t eat to try to treat my emotional state. However, when I’m feeling less than 100%, I don’t necessarily want a salad. Here are the comfort foods that I crave.

1. Chips and Dip

Pretty specifically, Ruffles and Mayfield French onion dip. I could probably eat an entire bag or chips. This has been my go-to for as long as I can remember.

2. BLT sandwich

Yep, salt and fat. Bacon, crunchy lettuce, a couple of slices of ripe tomato, and mayonnaise on toasted white bread. Or maybe untoasted white bread, just depending on my mood. I could eat a BLT anytime, any day.

3. Grilled Cheese Sandwich

Here we go again. Again, white bread, American cheese, butter…grilled to a crisp. Hot, crunchy, and gooey, there really is nothing like a grilled cheese.

4. Campbell’s Cream of Chicken Soup with Saltine Crackers

Now, honestly…I can’t remember the last time that I actually ate Campbell’s Cream of Chicken Soup, but my memories of it are so fond. Everyone thinks of chicken noodle soup as the classic comfort food, but I always ate cream of chicken, never chicken noodle. Always with saltines.

5. Tacos

This may sound weird, but when I feel a little sick, I would 100% rather eat good old classic ground beef tacos than just about anything else.

6. Chicken Tenders and Fries

With copious amounts of honey mustard (and it must be creamy, mayonnaise-based honey mustard). I rarely order this in restaurants anymore (it used to be a standard order) but when my spirits are kind of low, I am much more likely to order this.

7. Popcorn

Just my favorite snack ever. EVER. When I don’t feel like packing a lunch, I’ll pop some popcorn and throw it in my lunch bag with some fruit, cheese, pickles, etc. and call it a day.

8. Fresh Fruit Popsicles

Always the kind that have actual pieces of fruit in them. This is my standard stomach virus food, the thing that I eat when there is about a 10% chance that anything that goes into my stomach will stay there. Strawberry is my favorite.

9. French Fries

I can make a meal out of French fries. I don’t need anything else to go with them. Sometimes, when I go to a restaurant, I will order just based on what comes with fries. Other times, I’ll want to try a different side, but I. Just. Can’t. Not order. Fries. They must have a dipping sauce, too.

10. Tortilla Chips and Queso

Like, the white cheese dip that might have some jalapeños in it and is most definitely made from American cheese. It’s 100% unauthentic but I must order it every time I go to a Mexican restaurant because it’s delicious. I crave it at home, too, but rarely make it myself.

Why is it that comfort foods are rarely “healthy” foods? Why can’t I crave salads or carrot sticks and hummus? Oh well. Comfort foods are things that I crave from time to time, but not all the time, so I’m cool with eating them when that’s what I really want.

If you follow Chattavore on Facebook, you no doubt saw a few posts last weekend about me serving grilled pimento cheese sandwiches and homemade biscuits at the Tri-State Home Show, which is an annual event sponsored by the Homebuilders Association of Greater Chattanooga. Some of you might have even come by the AllSouth Appliance booth and seen me whipping up said sandwiches and biscuits. It was a great time!

Back in November, I went to the Southern Food Bloggers’ Retreat in Prattville, Alabama. It was an amazing experience and I got to meet some wonderful Southern food bloggers, including Stacey Little from Southern Bite and Christy Jordan from Southern Plate. Stacey and Christy both work with AllSouth Appliance in their Montgomery and Huntsville locations, respectively, and shortly before the retreat Stacey sent me a message on Facebook to let me know that they were looking for a food blogger to work with in Chattanooga. Was I interested? Um, yes! Turns out that AllSouth had opened in Chattanooga just a few months before. They were one of the sponsors of the retreat, so at our Friday night reception, Stacey introduced me to their wonderful marketing director, Leah.

I was SO excited to go to the Chattanooga showroom to meet Leah back in January and talk about a partnership with AllSouth. Their showroom is filled with gorgeous high-end appliances, but AllSouth has appliances for every budget. They’re family-owned and they’ve been around for nearly 20 years, with locations in Huntsville, Birmingham, Montgomery, and now Chattanooga. It didn’t take long for me to figure out that this was just the type of company that I wanted to work with.

The first thing on the agenda was the Tri-State Home Show, which is held every February or March at the Chattanooga Convention Center. I’ve never seen so many home-related vendors all in one place…I can truly say that I don’t think there is any product or service that you might need for your home that wasn’t represented there! I got to use the GE Profile Advantium, which is a microwave, convection oven, speed cook oven, and warming drawer. Can I just say that I’m in love with this machine? It has a grilled cheese setting. DID YOU HEAR ME? A GRILLED CHEESE SETTING!. And, true to its name, that grilled cheese setting churned out gorgeous, golden, melty grilled pimento cheese sandwiches that got snatched right up. 252 tiny little sandwiches to be exact. It’s safe to say that Home Show goers were fans.

This is just the beginning for Chattavore and AllSouth, though. On April 21st, I’ll be teaching my first cooking class at their Chattanooga Showroom! We are hoping to make this a monthly occurrence, so check back often to find out what we have up our sleeves. I’m so excited to work with AllSouth Appliance!

This week, I won’t be posting a restaurant review. I had a “meh” experience at a Chinese buffet this past weekend. No need to elaborate…it wasn’t awful but there just wasn’t much to say. Instead, I asked my readers to share some of their crazy restaurant experiences. They were happy to oblige. The point is not to talk about specific restaurants, but rather to have a laugh (or a cringe) at some of the wild things that can happen when we dine out!

Kristy – Worst ever was at a popular breakfast restaurant. When the server asked how we wanted our eggs, and we said sunny side up, we got a blank stare. Then he said, “So…scrambled?” It was all downhill from there. Lol. Bad food, bad service, and when we asked for the check, he reached in his pocket and pulled out a huge ball of crumpled up receipts and sorted through them on the table next to us.

Rebecca – I don’t think you want to know mine unless you never want to look at rice the same way again…last time I checked, rice shouldn’t move! And it was at a very popular chain restaurant!

Amanda – We were at a Mexican joint and our basket of chips had wads of gum stuck to the liner. We left.

Ashley – Worst experience was walking in to a Certain Chinese restaurant for the first time and seeing someone face first in their plate. EMTs were out front and the person was deceased.

Jennifer – My boyfriend at the time (now husband) and I went to a fancy restaurant on Valentine’s around 3 to get drinks and a little something to eat before his tennis match. We sat at the bar, they gave us the lunch menus, then as we were ordering they said no you have to order from the overpriced, limited valentines menus. We paid, left, and have never been back- nor do I intend to be back. Poor service to give one menu then play take backsies

Tim – Summertime, Caesar salad prepared table side. Server refused a napkin as the sweat bead rolled off his nose into you-know-where. Luckily I’m on low salt diet. Sent it back. Mortified manager comped our entire check.

Jennifer – Went to a very popular breakfast place in Nashville with friends. My husband and I ended up wearing blueberry syrup (hair, face, ears, clothes) thanks to our waitress. She attempted (about 2 swipes) to wipe it off my back but then left with no apology. I went to the restroom to attempt to clean up and a kind stranger tried to help. When I told her what happened she walked out of the restroom with me, asked for the manager and demanded our meal be free. He just nodded and still, I got no apology. At least the meal was free.

Billie – I was at a pizza place and the waitress tripped and poured a whole pitcher of tea all over me. I was soaked. And it was with a whole group of friends who got to witness and laugh. Better to laugh with them than cry which I felt like doing.

Dallas – I went to a Sunday afternoon birthday dinner at a now defunct Mexican chain. After we waited for about 90 minutes with no food or staff in sight, one of the party went to the kitchen to find our server so he could cancel his order and leave. There was a fistfight going on among the kitchen staff. We eventually got food, then waited another 20 minutes for silverware.

Brooke – A local Chinese restaurant. Two roaches crawled across the table and on the wall while we were eating. At the same time. Left immediately.

Dana – [A roach on the table at a popular local restaurant]. Haven’t been back there. The waitress was so nonchalant about it, you could tell it wasn’t the first time.

Paula – Once I was out of town with a group of co-workers for a conference. Anyway, first when the server brought our salads one of my coworkers noticed a fresh bandaid on her finger and asked about it. Server said she had just sliced her finger making our salads, and had a hard time getting the bleeding to stop. Then later when she was delayed bringing our entrees out she apologized, saying she had just been cleaning the bathroom.

Tammy – I was served half frozen shrimp at a local restaurant after waiting 45 min for my food. They took it back without offering anything else and tried to charge me for it.

Chastity – We did find a roach baked into a pizza, but that was out of the country. While it wasn’t my actual food, my dad did find a pube (yes, I said that) in his taco at a Mexican restaurant…that’s enough to make the entire party stop eating. I doubt you’re surprised.

Brooke – Many years ago we went to a Mexican restaurant (now closed) and the waiter was bringing cheese dip to our table. Before he reached our table he swiped his finger around the outside edge of the bowl to catch the dripping cheese……and then LICKED it off of his finger!

I find no meal more comforting than grilled cheese and tomato soup. It reminds me of the red and white can of my childhood (you know the one of which I speak)…of winter days sitting at the little round table at my parents’ house, of my elementary school cafeteria and one of the few school food meals that I actually enjoyed, and of my first teaching job, where our lunches were provided for us and grilled cheese and tomato soup were on a monthly (at least) rotation.
I don’t remember the last time that I ate that tomato soup from the little red can. I haven’t bought canned soup in ages, not since I figured out that it was pretty flippin’ easy to make soup from scratch and that it is so much better than canned. I’ll be honest, I’m sure I’d still love that soup from a can. You know, nostalgia and all. But there’s a lot of sodium in those little cans, and sugar too.

Plus, when you make your soup from scratch, you get to choose your own ingredients and put whatever you want into your soup. Me? When I make tomato soup, I want creamy tomato soup. And sherry. Yes, sherry. There’s a lot of sherry in this recipe, so if you’re feeding kids (because not all of the alcohol cooks out) half the amount of sherry or omit it altogether and just replace it with chicken stock. I basically take every opportunity that I can to add artichoke hearts to anything, and, you know, spinach and artichokes go together like peanut butter and jelly.
This winter, make this creamy tomato soup with artichokes as many times as possible. Maybe eat it with a grilled cheese sandwich (or cheese toast, which you can see is what we did) and dream of childhood.

Creamy Tomato Artichoke Soup

Ingredients

  • 2 tablespoons unsalted butter
  • 1 medium onion, diced
  • 1 cup sherry
  • 28-ounce can whole tomatoes (Cento or Tutturosso are my favorites)
  • 4 cups low-sodium chicken stock
  • 2 cups artichoke hearts, coarsely chopped (9-ounce package frozen or 14.5 ounce can, drained)
  • 5 ounce bag baby spinach
  • 1/2 cup heavy cream
  • salt and pepper, to taste

Instructions

  1. In a six to eight quart Dutch oven, melt the butter over medium heat. Add the onions to the pot and cook until they begin to turn translucent, 3-5 minutes. Add the sherry to the pot and allow it to come to a boil and cook briefly (about one minute).
  2. Crush the tomatoes in your hands or lightly puree them in a blender or food processor. Add the tomatoes (including any liquid from the can) to the pot along with the chicken stock. Bring to a simmer and cook for about 10 minutes.
  3. Add the artichoke hearts and the spinach to the pot. Cook until the spinach wilts. Add the cream and stir to combine completely. Add salt and pepper to taste. Serve immediately.

All right, friends, Thanksgiving is over. I hope everyone had a fabulous holiday with their families and that you don’t get into any Black Friday fights. We don’t do Black Friday…we abhor crowds and do everything that we can to avoid them unless it is absolutely necessary that we wade into the insanity. I’d much rather stay home and read cookbooks and binge-watch sitcoms on Netflix.

It’s finally starting to get cold here, much to my chagrin. I am not a fan and, for that reason, plan to never live above the Mason-Dixon line. Actually, I plan to never live above the Hamilton-Rhea County line, but whatever. Some of my friends up North have posted on Facebook about snow or extreme temperatures and I’m all “Better you than me.” I’m telling you, I hate the cold.

I will say, though, that cold brings me an excuse to make soup without seeming like a crazy lady, and that’s a good thing (I eat soup year-round, and apparently there are some people that think that isn’t normal). When it’s cold, I try to make soup at least one night a week…we’ll eat it for at least two dinners, often having leftovers for lunch or to put in the freezer as well. That, you guys, is a very good thing.

I’ve made plenty of chicken noodle soup in my years but I’ve honestly never been thrilled with the result. The more I think about it, the more certain I am that it was because chicken noodle soup seems so simple, like you could just throw some chicken and some noodles and perhaps some carrots into a pot full of chicken stock and turn up a great soup. That’s not the case, people. Chicken noodle soup takes some work to build the flavors, to make them complex and not watery. A couple of tries and I had it right with this one, with a little heavy cream thrown in for good measure. Cause you know, that’s how I roll. If you make this creamy chicken noodle soup, you may never make it any other way again!

Ingredients

  • 2 tablespoons olive oil
  • 1-1.5 pounds chicken thighs, trimmed
  • salt and pepper
  • 4 tablespoons unsalted butter
  • 1 large onion, diced
  • 2-4 carrots, diced (depending on the size)
  • 2 stalks celery, diced
  • 8 ounces mushrooms, wiped clean and quartered
  • 1/4 cup all-purpose flour
  • 4 cups low-sodium or homemade chicken stock
  • 2 cups medium egg noodles
  • 1 cup milk
  • 1/2 cup heavy cream

Instructions

  1. Preheat the olive oil in a 6-8 quart stockpot over medium-high heat. Sprinkle the chicken thighs with salt and pepper then brown in the olive oil for 2-3 minutes on each side. Remove to a plate and set aside.
  2. Add the butter to the pot and reduce the heat to medium-low. When the butter has melted, add the onions, carrots, and celery, cover, and cook for 5-10 minutes, until the vegetables are softened and just beginning to brown on the edges. Uncover and add the mushrooms; cook until the mushrooms begin to soften.
  3. Sprinkle the flour over the vegetables and stir to combine. Cook for about one minute to cook out the raw flavor of the flour. Slowly add the chicken stock while stirring to incorporate. Increase the heat to medium and add the chicken back to the pot. Bring to a simmer and cook until the chicken is cooked through. Remove the chicken and add the noodles to the pot. Cook for the time recommended on the noodle package.
  4. While the noodles are cooking, shred the chicken with two forks. Add back to the pot. When the noodles have finished cooking, add the milk and heavy cream and stir until fully incorporated. Add salt and pepper to taste. Serve immediately.

Notes

This soup tastes just as good when served as leftovers, but the noodles will continue to soak up the liquid so it will be more like a pasta dish then a soup when served as leftovers.
