It’s an old joke…you eat Thanksgiving leftovers for days…weeks, even. It gets old after a couple of days, right? What if you revamped your Thanksgiving leftovers? Blogging can be a lonely job, y’all. Unlike with most jobs, you don’t have office mates or co-workers to chat with. As a special education teacher, I always had an assistant or two around to talk to and, even in my current job, I talk to all sorts of people in the schools I visit and have a lot of friends who do a job like mine. Education = not a lonely job.

But with blogging, you’re alone most of the time. I mean, my husband is here, but he’s watching TV or whatever while I am focused on writing. That is exactly what is happening as I type this. So, when I discovered the paleo blog A Calculated Whisk and Becky, the author, replied to one of my comments stating that she was soon moving to Chattanooga from Boston, I was super-excited. A bloggy friend in my city! Becky gets it…she blogs while working a full-time job just like me. We’re blog sisters (that is so cheesy. Sorry Becky.).

I was so excited when Becky asked me to review her new cookbook, Paleo Planet. The book was just released by The Harvard Common Press on November 3 and I was thrilled when it came in the mail. First of all, the book is absolutely gorgeous-a bright and airy, perfectly photographed paperback. Becky took all the pictures, you guys. I need to hang out with her more. Maybe I’ll soak up some of her photo magic.

The tagline of the book is Primal Foods from the Global Kitchen with more than 125 recipes. In the book, Becky has taken on international cooking from a paleo kitchen. Becky manages cornbread without the corn (my best friend, who had a corn allergy but desperately misses cornbread, will be so happy), noodles without the pasta (zucchini noodles aka “zoodles”, anyone?), and Colcannon (an Irish potatoes & greens dish) without the potatoes (let’s hear it for rutabaga!). There’s a photo for every recipe, and if the photos don’t make you want to eat every single dish in the book then you are the one with the problem (okay, that was a little harsh. Sorry.).

The book is divided into eight chapters: Spice Blends, Pantry Staples, & Sauces; Appetizers, Soups, Salads, & Snacks; Poultry; Beef, Pork, & Lamb; Seafood; Vegetables; Breakfast & Brunch, and Desserts. I decided to venture into the beef, pork, & lamb chapter and make the marinated skirt steak with cilantro-lime ghee. The hardest part was the ghee, which was totally worth it. You guys, it’s like brown butter without the brown bits. So yum. It was very easy to make, but make sure you have cheesecloth…I didn’t and had to strain the butter through a coffee filter (I have a problem with reading recipes sometimes).

Aside from that, the only difficult task is making sure that you marinate the steak long enough. It needs at least 2 hours to marinate so that it breaks down the tough fibers of the skirt steak a bit (you can do it overnight, though, or throw it in the marinade before you leave for work in the morning). After that, you just grill the steak for a few minutes (seriously: 6 minutes), rest it, and slice it. The softened ghee stirs into a compound ghee with a few simple, clean ingredients and flavors the steak beautifully. Everything about this marinated skirt steak sings.

Marinated Skirt Steak with Cilantro-Lime Ghee

Ingredients

    For the ghee
  • 1 pound (4 sticks) unsalted butter
  • For the steak
  • 1/4 cup extra-virgin olive oil
  • 3 tablespoons fresh lime juice
  • 4 cloves garlic, chopped
  • 1/2 teaspoon flaky sea salt
  • freshly ground black pepper
  • 1 1/2 pounds skirt steak
  • For the compound ghee
  • 1/4 cup ghee, softened
  • 1 clove garlic, finely minced (I use my garlic press for this)
  • 1 tablespoon finely minced fresh cilantro
  • 1 teaspoon freshly grated lime zest (this was about the zest of one lime for me)
  • 1/4 teaspoon flaky sea salt
  • 1/8 teaspoon cumin
  • pinch cayenne pepper
  • freshly ground black pepper, to taste

Instructions

  1. Make the ghee: Line a fine-mesh sieve with a double layer of cheesecloth. Set over a large heatproof bowl. Heat the butter in a medium saucepan over medium heat, swirling frequently. Allow the butter to come to a boil and watch closely until brown bits begin to form and fall to the bottom of the pan (these are the milk solids). When the brown bits turn a rich chestnut color, remove from the heat and strain through the cheesecloth-lined colander. Allow to cool to room temperature then transfer to a glass jar and store in the refrigerator.
  2. Marinate the steak: In bowl large enough to hold the steak, whisk together the olive oil, lime juice, garlic, sea salt, and black pepper. Add the steak and turn to coat. Cover and store in the refrigerator for at least 2 hours or overnight.
  3. Make the compound ghee: stir together all compound ghee ingredients until well-combined. Store at room temperature until ready to use.
  4. Cook the steak: remove the steak from the refrigerator 45 minutes before you plan to cook it. Preheat an outdoor grill, indoor grill (like a George Foreman), or a cast iron pan (I used a cast iron pan heated over medium-high heat).
  5. Pat the steak dry with paper towels and wipe away the large pieces of garlic. Grill the steak for at least 2 minutes on each side or to desired doneness (mine took 3 minutes per side to get a nice char on the outside and medium-rare on the inside).
  6. Remove the meat from the grill/pan and place on a cutting board or plate. Cover with foil and allow to rest for 5-10 minutes. Carefully cut against the grain and serve with the cilantro-lime ghee.

Notes

The prep time includes minimum marinating time. It is important to cut fibrous cuts of meat like skirt steak or flank steak against the grain. If you cut with the grain, the long fibers of meat will be difficult to chew.

There was a time when the combination of sweet and salty wasn’t my jam. I thought it was weird and I wanted nothing to do with it. Honestly, I don’t remember who introduced me to Frosties and fries at Wendy’s, but I am forever grateful to that person for the gift that they gave me. After one time, dipping those hot, salty fries into the cold, sweet Frosty, I was addicted. And not just to Frosties and fries. I was a forever devotee of sweet and salty.

Life has come full circle now (I don’t think that’s really the right use of that term but I don’t really care because I like the way it sounds). I sneak salt into every sweet application that I can possibly work it into. Salted caramel was the best idea ever and, yes, I know the bacon trend is so two years ago but BACON IS GOOD ON EVERYTHING. BACON AND CHOCOLATE, y’all.

We tend to limit the sweet and salty combo to desserts, though, and that’s kind of sad. It doesn’t necessarily work as readily for more savory dishes, but if you try hard you can think of some pretty darn good ways to pull it off. I’ll never forget when I worked at a little shop that used to be above River Street Deli and they had a turkey and cream cheese sandwich with cranberry sauce on Black Friday. Um, what? Turns out they had a regular menu item that was similarly structured, only with strawberry jam instead of cranberry sauce. Yes PLEASE.

So, this sandwich…it’s called the Elena Ruz. I had no clue that it was Cuban until we visited Embargo 62 a couple of months ago and I saw it on their menu. Apparently, the sandwich was named for a socialite who used to order it in an all-night diner in Havana. That Elena Ruz chick was pretty creative and had a darn good grasp on flavor combinations…this is a great sandwich. There’s some conflict over what kind of bread it was originally served on-sandwich bread or a media noche bun-but I like the bun because it’s a little sturdier.

Speaking of sturdy, the first time that I made this our sandwiches absolutely fell apart on us because of all the gooey stuff…so I left off the preserves, heated them, and served them on the side as a dipping sauce. Problem solved. Guys, make the Elena Ruz sandwich with your Thanksgiving leftovers (I used the leftovers from these sage butter turkey thighs). Or buy some deli turkey…I won’t judge. Either way, make it. You know you wanna!

Ingredients

  • 4 hoagie rolls (I like Martin's potato rolls)
  • 1 pound shredded turkey, or 4 servings deli sliced turkey
  • 4 ounces cream cheese, softened to room temperature
  • 2 tablespoons unsalted butter, melted
  • 1/4 cup strawberry jam or strawberry preserves

Instructions

  1. Preheat two cast iron skillets over medium heat.
  2. Open the hoagie rolls and spread each cut side with approximately one tablespoon of the cream cheese.
  3. Divide the turkey among the rolls. Close the rolls and butter both sides of each roll. Place the sandwiches into a skillet and place the other skillet on top as a press (you may need to do this in batches of two). Cook for 2-3 minutes or until lightly browned on both sides.
  4. Remove the sandwiches from the skillet. Cut in half. Heat the jam/preserves and serve on the side for dipping.

Mojo Burrito – St. Elmo

Mojo Burrito in St. Elmo (downtown Chattanooga, Tennessee) serves great Tex-Mex food in a fun, casual atmosphere with a focus on local food!

I’ve written about Mojo Burrito before, but the Red Bank location. Besides, it’s been a few years. The original location, the St. Elmo Mojo Burrito moved a few weeks ago into the location that formerly housed Slick’s Burgers and, before that, Sugar’s Ribs. They’ve done quite a bit of remodeling on the location, brightening it up, changing the seating arrangement, and adding an expansive outdoor seating area (both covered and uncovered) for those who like to dine al fresco.

The first thing that you notice when you walk in, at least if you’ve ever been to the previous location, is that the line makes sense now. The last time I went into the previous location before it was lunch time on a week day and the line got out of control. No one knew where to stand. That kind of thing stresses me out.

Typically I order nachos when I go into a place like Mojo Burrito. I just have a thing for salty tortilla chips gooey with melted cheese. The fish tacos caught my eye, though, so I decided to order those-fried tilapia tenders, served with remoulade sauce and pineapple salsa, with beans and rice on the side. I ordered black beans with my rice, Mexican-spiced rice. I took my tacos on soft flour tortillas (you can also get crunchy corn tortillas). The fish was cornmeal breaded and fried till crisp, nicely seasoned. The tacos came with lettuce and I also got a little bit of fresh jalapeño. The remoulade was delicious, just lightly spicy with a few capers (if you hate capers, don’t worry…you won’t even taste them). The pineapple salsa was fantastic…pineapple with a little onion and jalapeño, very fresh. Everything worked really well together.

Philip stuck to his usual, a burrito. He’s a traditionalist. He got it with ground chuck, which the guy taking the orders told him was “very garlicky”. He was not lying. He also got rice, black beans, guacamole, sour cream, cheese, pico de gallo, and a little of the hot salsa. It was quite a burrito, and I am always astonished by the ability of the burrito makers to fold those gigantic things so proficiently. The guy made it look easy! The burrito was huge, very fresh, and delicious. The burritos also come with a side of chips and salsa, plus we ordered a small basket of chips with the mild salsa because I wanted some too. The chips were light and perfectly salted, the salsa garlicky and just a tiny bit tangy with jalapeño.

The thing that I love about Mojo Burrito is their commitment to fresh and local ingredients. Their prices are really very close to similarly structured chain restaurants (e.g. Moe’s) and the portions are generous to say the least.
