My life is crazy busy these days. I work 40 hours a week, often eating lunch in my car and usually meeting deadlines by the skin of my teeth. Then I come home and work out (every day, because when you are a food blogger you can’t afford to NOT work out every day), make dinner, and settle into my second job. Wait, what? Oh yeah, I’m talking about blogging. I work on my blog from the time I finish dinner to the time I go to bed, and I think about it basically every second in between.

No wonder, then, that the fewer pans that I can dirty when I’m making dinner the better. When I’m planning what I’m going to cook, I’m always thinking, “How can I make this into a one-pan meal?”. Less washing, more time. ? How can you say no to that?

One-pan pasta is the best, because you don’t even have to drain it. Everything cooks in the pan all at the same time. I’ve shared something similar in this space before, but this time I got a little cheeky and used heavy cream instead of milk. Yes, that’s right. Heavy cream. Why, you ask? Alfredo pasta. Heavy cream = alfredo. Plus shredded chicken and bacon and broccoli and mozzarella. This chicken bacon alfredo pasta skillet (whew, that’s a mouthful) is a complete meal but you only have to dirty one skillet. And check out that cheese? This pasta skillet is weeknight worthy, for sure!

Ingredients

  • 4 slices bacon, diced
  • 1 head broccoli, washed and cut into small florets (save stem for a different use)
  • 8 ounces small pasta, like shells or rotini
  • 2 cups shredded chicken (I used the meat from 4 chicken thighs)
  • 3 cups milk or 1 1/2 cups milk and 1 1/2 cups heavy cream (this is what I used)
  • 8 ounces fresh mozzarella cheese, torn into small pieces
  • salt

Instructions

  1. Cook the bacon over medium heat in a large (12-inch) oven-safe skillet until crisped. Remove with a slotted spoon to a paper-towel lined plate. Drain away all but one tablespoon of the bacon drippings.
  2. Add the broccoli and cook, stirring frequently, for about one minute. Add the pasta and the chicken and stir to combine. Pour in the milk and/or cream and season with one teaspoon of salt.
  3. Raise heat to medium-high and bring the pasta mixture to a boil. Cook until all the liquid is absorbed and the pasta is tender, 10-15 minutes. Meanwhile, preheat the broiler.
  4. Stir the bacon and 3/4 of the cheese into the pasta. Sprinkle the top of the pasta with the remaining cheese. Place under the broiler and cook until the cheese is browned. Serve immediately.

What are your feelings about Reuben sandwiches?

It seems to me that Reubens are a sandwich that a lot of people really, really like…even when they wouldn’t touch the individual ingredients with a ten-foot pole. Let’s break this down: a Reuben is made from rye or marbled (pumpernickel & rye) bread, corned beef, sauerkraut, Swiss cheese, and Thousand Island or Russian dressing. Every single one of those ingredients is a little maligned, even, in my experience, Swiss cheese.

Okay, I’ll admit it. It’s me. IT’S ME that has a problem with those ingredients. Well, except corned beef (but I do know a LOT of people who don’t like corned beef. Those people live in a world that I don’t understand). I LOVE CORNED BEEF. I look forward to March every year because I know that corned beef briskets will be on sale for a week or two before ☘St. Patrick’s Day☘. My emotion when I see those sales = pure glee.

Anyway, anyway, back to Reubens. I really, really do not care for rye bread. I guess I am some sort of anomaly. There’s just a, I don’t know, “whangy” flavor to it (I was totally channeling my mom just now, you guys)…it’s the caraway seeds. And Swiss cheese is kind of bland, though I do cook with it a lot. And sauerkraut? Don’t get me started (yes, I know it’s good for you).

But here’s the thing: once you put all of those ingredients together into a sandwich and grill it up, something magical happens. It. Just. Works. As I thought about it, I started thinking…if it works that well in a sandwich, I’m willing to bet that it will work just as well in a soup. A creamy, Swiss cheesy soup base with potatoes and shredded corned beef, with sauerkraut stirred in and a little homemade Thousand Island drizzled on top, plus rye croutons? Reuben soup sounds like my kind of dinner.

This Reuben soup is a Reuben sandwich in a bowl. It’s hot, creamy, cheesy, and delicious. Just as magical as a Reuben sandwich.

Ingredients

  • 2 tablespoons unsalted butter
  • 1 medium onion, diced
  • 1 pound potatoes, scrubbed and diced
  • 4 cups (or 1 32 ounce carton) low sodium chicken stock
  • 3 tablespoons flour
  • 1 cup milk
  • 4 ounces Swiss cheese, grated
  • 8 ounces (about 2 cups) corned beef, chopped or shredded
  • 1 cup sauerkraut, well-drained
  • salt and pepper, to taste
  • For the rye croutons
  • 6 slices rye bread, cut into cubes
  • 1/4 cup olive or vegetable oil
  • For the sauce
  • 1/4 cup mayonnaise
  • 1/4 cup ketchup
  • 1 1/2 teaspoons prepared horseradish or hot sauce
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon pickle relish
  • 1 clove garlic, minced

Instructions

  1. In a small bowl, whisk together the sauce ingredients. Cover and refrigerate until ready to use.
  2. Preheat the oven to 400 degrees. In a medium bowl, toss the bread cubes with the oil. Spread on a baking sheet and bake for 10-15 minutes, until crunchy, stirring halfway through cook time. Set aside.
  3. In a 6-8 quart Dutch oven, melt the butter over medium heat. Add the onions and cook until translucent. Add the potatoes and the chicken stock and a bit of salt. Bring to a simmer and cook until the potatoes are tender.
  4. Slowly whisk the milk into the flour then add to the soup. Stir until thickened then add in the cheese a handful at a time, stirring until melted after each addition.
  5. Stir in the corned beef and the sauerkraut and cook until heated through. Salt and pepper to taste. Serve immediately, topped with croutons and sauce.

If you follow Chattavore on Facebook, you no doubt saw a few posts last weekend about me serving grilled pimento cheese sandwiches and homemade biscuits at the Tri-State Home Show, which is an annual event sponsored by the Homebuilders Association of Greater Chattanooga. Some of you might have even come by the AllSouth Appliance booth and seen me whipping up said sandwiches and biscuits. It was a great time!

Back in November, I went to the Southern Food Bloggers’ Retreat in Prattville, Alabama. It was an amazing experience and I got to meet some wonderful Southern food bloggers, including Stacey Little from Southern Bite and Christy Jordan from Southern Plate. Stacey and Christy both work with AllSouth Appliance in their Montgomery and Huntsville locations, respectively, and shortly before the retreat Stacey sent me a message on Facebook to let me know that they were looking for a food blogger to work with in Chattanooga. Was I interested? Um, yes! Turns out that AllSouth had opened in Chattanooga just a few months before. They were one of the sponsors of the retreat, so at our Friday night reception, Stacey introduced me to their wonderful marketing director, Leah.

I was SO excited to go to the Chattanooga showroom to meet Leah back in January and talk about a partnership with AllSouth. Their showroom is filled with gorgeous high-end appliances, but AllSouth has appliances for every budget. They’re family-owned and they’ve been around for nearly 20 years, with locations in Huntsville, Birmingham, Montgomery, and now Chattanooga. It didn’t take long for me to figure out that this was just the type of company that I wanted to work with.

The first thing on the agenda was the Tri-State Home Show, which is held every February or March at the Chattanooga Convention Center. I’ve never seen so many home-related vendors all in one place…I can truly say that I don’t think there is any product or service that you might need for your home that wasn’t represented there! I got to use the GE Profile Advantium, which is a microwave, convection oven, speed cook oven, and warming drawer. Can I just say that I’m in love with this machine? It has a grilled cheese setting. DID YOU HEAR ME? A GRILLED CHEESE SETTING!. And, true to its name, that grilled cheese setting churned out gorgeous, golden, melty grilled pimento cheese sandwiches that got snatched right up. 252 tiny little sandwiches to be exact. It’s safe to say that Home Show goers were fans.

This is just the beginning for Chattavore and AllSouth, though. On April 21st, I’ll be teaching my first cooking class at their Chattanooga Showroom! Chocolate chip cookies are pretty much the pinnacle of cookiedom in my world. Lemme tell you, I consider oatmeal raisin cookies a betrayal (though I will happily eat an oatmeal chocolate chip cookie). I’m sure you’ve heard that before, but you guys, I hate raisins. Iced sugar cookies and snickerdoodles are okay, and I won’t turn down a peanut butter cookie, but no cookie – no cookie – can stand up to a classic chocolate chip cookie. Or a brown butter chocolate chip cookie, whatevs.

I’m sure that’s because I grew up on my grandmother’s perfect Toll House cookies. For bake sales and Christmas she’d set up her green Sunbeam stand mixer and mix up tons of cookie dough, some plain, some with nuts, and some with mint chocolate chips (always my favorite). She’d portion them into teaspoon-sized scoops and roll them into perfect balls before baking. I remember her kitchen lined with wire cooling racks and waiting for that first perfect cookie.

I love baking cookies, and true to form, chocolate chip cookies are my favorite. Well, until I had the idea for peanut butter banana chip cookies. I was dreaming about peanut butter cookie dough with bananas mixed right into the batter, then banana chips chopped up and mixed in. Then I took it a step further and stirred in peanut butter chips and chocolate chips. Oh yes I did.

The first version of this didn’t have flour or eggs. I read somewhere that you could substitute one medium ripe banana for every egg called for in a baking recipe. The math seemed off to me, but I tried it. The math…the math was indeed off. While my five-ingredient cookies were fabulously delicious and made my house smell like a peanut butter forest, we had to scrape the batter off of the baking sheet with spoons in order to eat it. MAJOR FAIL..

For my next batch of peanut butter banana cookies, I dug around to find a basic recipe to start from. Gimme Some Oven gave me a perfect starting point. I stirred in peanut butter chips and chocolate chips then went to grab my banana chips and oops. Philip had finished off the jar. Oh well, that just meant I had to make them again.

And I totally did. This time with banana chips. I worried that the banana chips might get mushy, but while they didn’t really retain their crunch, there was no mush to be had. The banana chips added a wonderful hit of banana that you don’t really get from the banana mixed into the batter, which adds an incredible layer of moisture that definitely isn’t typical of a peanut butter cookie. Plus peanut butter AND chocolate chips. Yeah, these peanut butter banana cookies were a good idea. I think I’ll go have one right now!

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon cornstarch or arrowroot flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 1/2 cup brown sugar, firmly packed
  • 1/2 cup creamy peanut butter
  • 1 medium ripe banana
  • 1 large egg
  • 1 cup chocolate chips
  • 1 cup peanut butter chips
  • 1 cup banana chips, chopped

Instructions

  1. Preheat the oven to 350 degrees. Line two baking sheets with parchment paper or Sil-Pats.
  2. In a medium bowl, combine the flour, baking powder, cornstarch or arrowroot, salt, and baking soda.
  3. Using an electric mixer, combine the butter and brown sugar on medium high until fluffy. Scrape down the sides of the bowl and add the peanut butter, banana (I don't bother mashing the banana - I just break it into small pieces and drop them into the mixing bowl), and egg and beat until well combined.
  4. Turn the mixer off and add the flour mixture. Beat on low until it comes together into a batter. Add the chocolate, peanut butter, and banana chips and either beat in on low or stir in using a wooden spoon.
  5. Use a tablespoon or a tablespoon-sized cookie scoop to portion the dough onto the baking sheets. You will get about 16 cookies per sheet. Bake for 8-10 minutes, rotating the pans halfway through baking. Cool the cookies on wire racks before serving.

Like a true Southern girl, I love pimento cheese. I mean, in case you guys weren’t aware. The funny thing is that I wouldn’t touch it with a ten-foot pole when I was a kid. I didn’t start eating pimento cheese until well into adulthood, when the school where I worked would serve homemade pimento cheese sandwiches on Fridays and I fell in love.

Ever since I started making my own pimento cheese I’ve been on a quest to pimento cheese-ify as many things as possible. You might have noticed that I use it a little bit, like in these pimento cheese fries, or in pimento cheese biscuits, and on this pimento cheese chicken sandwich. I❤️pimento cheese. Sorry not sorry.

Pimento cheese spoon bread was originally going to be blue cheese spoon bread, but then I realized that I wanted to save my blue cheese for Buffalo chicken totchos (!!!) and use pimento cheese instead because pimento cheese spoon bread just sounds like something divinely inspired. Oh, guess what??? It was. Absolutely, 100%. It requires a little effort, but that’s just because you have to whip the egg whites. Other than that it’s just a little heating and stirring.

Usually I make my own pimento cheese, but I decided this time around to use Palmetto cheese, which is my favorite store-bought pimento cheese. I love that Palmetto cheese is basically just like the pimento cheese that you make at home, with shreds of cheese and not too much mayo. It’s also just a little spicy (and if you like it more spicy, you can get the jalapeño variety) and so flavorful. By the way, this isn’t a sponsored post! Just wanted to tell you guys about a product that I love. Palmetto cheese worked perfectly in this recipe, and this pimento cheese spoon bread turned out so flavorful and moist. We had it as a component of a vegetable plate, but it would be a great side for chicken or pork and it would also be delicious as breakfast, served with a fried egg on top.

Ingredients

  • 2 tablespoons unsalted butter, melted, plus more for greasing the pan
  • 2 cups milk
  • 1 cup finely ground cornmeal
  • 1 cup pimento cheese
  • 2 eggs, separated
  • salt and pepper

Instructions

  1. Preheat the oven to 375 degrees. Butter a 2-quart soufflé dish or casserole.
  2. In a medium saucepan, combine the milk and cornmeal. Set over medium-high heat and bring to a boil. Reduce the heat to medium-low and cook until very thick, about five minutes. Remove from the heat.
  3. Stir the pimento cheese into the cornmeal mixture until thoroughly incorporated. Salt and pepper to taste. Stir in the egg yolks, one at a time, and the butter.
  4. Using an electric mixer, beat the egg whites to stiff peaks. Carefully fold into the cornmeal mixture. Spread into the buttered dish.
  5. Bake the spoon bread for 35 to 40 minutes, until lightly golden and puffed. Serve while hot.
