Okay, okay…wedding season is over. Well, maybe not; I got married in July (16 years ago!), so I guess wedding season extends through the summer, but June is “wedding month”. But once you taste these wedding cake bites, you really won’t care what month of the year it is.

I’ve told the stories about Federal Bake Shop before. My BFF, Angie, and I used to head over there on a regular basis as skinny teenagers (though I foolishly thought that I was fat…I was NOT) and order copious amounts of sweets from their case. We didn’t discriminate…chocolate chip cookies, thumbprints, and cupcakes were all included in our purchases. That said, the classic white cupcakes were always our favorites, and still are to this day.

I am determined that Federal Bake Shop is the reason that a popular chain cupcake shop didn’t last in Hixson. I have no evidence to back that up, but that’s what I want to think. Three inches of mediocre frosting just can’t compete with a more moderate amount of the best frosting on the planet coupled with the best, most moist almond-flavored cake ever. Look, I might be a little biased.

Angie and I have spent the last twenty plus years trying to figure out how to get as much of those flavors in our lives as possible. Wedding cake mix cookies are one of my favorite ways to get those flavors out of my own kitchen, and when I was trying to decide what kind of sweets to gift Angie for her birthday last week I considered buying cupcakes, then I considered making the cookies. I used to make cake balls/cake bites a couple of times a month, no exaggeration. After I discovered them on Bakerella’s site I was basically obsessed. Red velvet were always my favorite, but I haven’t met a cake ball I didn’t love. For some reason, though, I had never thought about crushing up a white cake with some white icing and dousing it with a little almond extract to throw into my cake bites. Once I did…whoa.

And you guys, I know that this blog is usually about cooking from scratch. Sometimes, though, it just isn’t really worth the effort unless you are a total stickler for ingredients. If that’s you, by all means, make a white cake and white icing from scratch. But we’re crushing this cake up and mushing everything together so the texture isn’t really too important, and the flavor is coming mostly from that almond extract. A boxed mix and a can of frosting works just fine here. I usually buy almond bark chips from the baking section at a craft store (Hobby Lobby or Michael’s) but I just stopped at Food City for these. It’s always better to work with a little more than what you think you need, too.

Ingredients

  • one white cake prepared from a boxed mix according to package directions but with 1 1/2 teaspoons of almond extract mixed in before baking, cooled completely
  • one tub white icing
  • 1 1/2 teaspoons almond extract
  • 1 1/2 pounds white chocolate almond bark (you may have a little left over but it's better to have a little extra)
  • sanding sugar or decorative edible pearls for decoration (optional)

Instructions

  1. Crumble the cooled cake into a large bowl. Use your hands or a potato masher to mash the cake until no large pieces remain.
  2. Mix the icing and the almond extract into the cake until all of the cake crumbs have been moistened. I find that a large metal spoon works best for this.
  3. Scoop the cake mix in about 2 tablespoons sized balls onto a parchment or wax paper lined baking sheet. Roll into balls with your hands and chill for about 15 minutes in the freezer. Transfer the cake bites to the refrigerator.
  4. Line a second baking sheet with parchment paper or wax paper. Melt one pound of the almond bark in a deep bowl. I microwave it at 50% power for a minute at a time, stirring well after each minute, until smooth.
  5. Dip the cake bites one at a time into the almond bark. Transfer to the lined baking sheet, swirling the spoon to make a little swirl at the top of each cake bite as you move the spoon away. If desired, decorate the tops of the cake bites with sanding sugar or edible pearls while the almond bark is still "wet". Repeat until all cake bites have been dipped, adding more almond bark if needed.
  6. Allow the cake bites to stand at room temperature until hardened. Store in an airtight container at room temperature or in the refrigerator.

Notes

Prep/cook time does not include time to bake the cake or chill the undipped cake bites.

I love baking, but the thing about baking when there are two people in your house is that there is always so much left over. You might find this surprising, but it can be a little bit difficult to give away sweets. Everyone is always watching their weight, and I get that. When I worked in a school it wasn’t so hard; I’d just put the treats in the teachers’ lounge and they would get eaten pretty quickly.

These days, though, I try to make desserts that are easily frozen, or else I make things that can easily be made in small batches. It’s just so much easier that way. Then I don’t have to look at a dessert for three days after I’ve gotten tired of eating it (because usually even the best desserts get old after a few days) or worry about it molding on my counter. Believe it or not, we are not huge dessert eaters, especially now that Philip is working retail and we often eat dinner super-late.

Mug cakes fit the bill of a dessert that is only around for a night or two. Not to mention, an easy mug cake is something that you can probably whip up on a whim when you get a craving. I’ve made mug crisps, mug brownies, and now this. This easy mug cake with lime was an idea from a friend. She was looking for a substitute for her favorite key lime cake from a local bakery. Their cake contains lime Jell-O, and while it’s delicious, she has some food sensitivities and the food coloring in the cake did not agree with her.

An easy mug cake seemed like the perfect solution…just whisk a few basic ingredients in a bowl, divide it between a couple of mugs, and microwave it for just a couple of minutes. Topped with an easy cream cheese icing, this lime mug cake is perfectly summery. I adapted this recipe from one in the book Mug Cakes by Leslie Bilderback (<–affiliate link). Ingredients

  • 1 large egg
  • 1 1/2 tablespoons unsalted butter, melted
  • 1 tablespoon sour cream
  • juice and zest of one lime
  • 1/4 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • For the cream cheese icing
  • 2 ounces (1/4 bar) cream cheese, at room temperature
  • 2 tablespoons unsalted butter, at room temperature
  • 1 cup powdered sugar
  • 1 tablespoon milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Whisk all of the cake ingredients together in a small mixing bowl. Divide between two mugs. Microwave each cake for 1 1/2 to 2 minutes, watching to make sure the cakes don't run over. Allow the cakes to cool.
  2. To make the icing, mash the cream cheese and butter together in a medium bowl until well combined. Add the powdered sugar and stir carefully until well combined. Add the milk and vanilla and stir to incorporate. Top each cake with icing. Refrigerate any leftovers.

Notes

If you prefer, you can use 1/4 cup self-rising flour in place of the all-purpose flour, baking powder, and salt.

I checked Cooking for Jeffrey out from the library the other day. It’s a little thing I like to do when I am trying to decide if I want to buy a cookbook or not. With her books, it’s pretty much always going to be a yes, but it’s a good way for me to justify it to my husband. Okay, to myself. In the book, Ina talks about how when she was first married she spent hours and hours cooking elaborate meals, even though she had a stressful job in politics. I feel like that’s kind of my story too. I remember the first totally from scratch meal that I made for Philip. It was New Year’s Eve 2001 and I spent the entire day making tomato-basil pasta, Caesar salad, and homemade baguettes. Nothing too fancy, but seriously. I spent the.entire.day. making it. These days I rarely spend that much time cooking. Don’t get me wrong, I love to cook. But when friends are coming over I’m more likely to serve them hamburgers or smoked pork shoulder (don’t you wanna be my friend?) that the homemade ravioli I liked to serve friends back when I was a new wife.

I’ve come to realize that there’s nothing better than a simple dessert and a simple cup of coffee. Ingredients

  • 5 cups fresh, pitted or frozen cherries
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/2 teaspoon almond extract
  • For the Topping
  • 1 cup all-purpose flour
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 3 tablespoons cold, unsalted butter, cut into cubes
  • 1/4 cup Dunkin Donuts®Extra Extra Creamer (you could also use Dunkin Donuts®Original Creamer or Dunkin Donuts®Vanilla Creamer)

Instructions

  1. Preheat the oven to 400°. In a large bowl, combine the cherries with the cornstarch, sugar, and almond extract. Some of the sugar will remain dry; this is okay since the juices will come out of the cherries and the sugar and cornstarch will help thicken it. Pour into an 8-inch square baking dish.
  2. Wipe out the bowl. In the bowl, stir together the flour, baking powder, salt, and baking soda. Add the butter and use a pastry blender or your finger tips to work the butter into the flour until the flour resembles coarse crumbs. Add the Dunkin Donuts creamer and stir until all of the flour is moistened.
  3. Crumble the biscuit topping over the cherry filling. Bake for 40 minutes.
  4. Cool the cobbler for 20-30 minutes before serving. Serve with vanilla ice cream or whipped cream.

Raise your hand if you grew up eating muffin mix out of a packet (??). Yep, I definitely did. In fact, I’ll admit that Philip and I routinely made muffins from a packet on Sunday mornings before going to church for years. There is just something so easy about dumping a mix into a bowl, adding some milk, and mixing. Strawberry, blueberry, and mixed berry were my favorite (no banana nut or apple spice for me, thanks).

Did you know that most of those mixes don’t actually contain any of the actual fruit featured, though? While I won’t deny that I could probably still to this day spoon an entire batch of it straight from the mixing bowl into my mouth, I would rather have real fruit than dehydrated apple bits flavored like strawberry or blueberry. Problem is, making muffins from scratch can sometimes be a problematic proposition. They take a long time and can be a little messy. When you’re in the mood for quick and easy, from-scratch muffins don’t really fit the bill. Dried fruit (like raisins, cranberries, apricots, etc.) tend to be super high in sugar and, while delicious (okay, not raisins, I hate raisins), they definitely don’t have the same texture as fresh fruit.

Have you ever had freeze-dried fruit (I buy it at Target)? Like, astronaut food dried fruit (who has had astronaut ice cream? If you haven’t you need to get ahold of some just to say you have)??? When you put freeze-dried fruit into a homemade muffin mix, it ceases to be weird. Once you add the wet ingredients, they rehydrate the freeze-dried fruit and it becomes…fruit. Just fruit. So, in a dry mix: shelf stable. With wet ingredients: basically indistinguishable from fresh fruit. This recipe, adapted from the book Ratio by Michael Ruhlman (affiliate link), is just layering some ingredients in a jar that you can stick in your cabinet, then mixing them up in a bowl with some liquid, eggs, and butter, scooping them into a muffin tin, and baking. Do they take a little longer than packet muffins? Sure. Is it worth it? Without a doubt.

Ingredients

    For the Muffin Mix
  • 4 ounces (scant 1 cup) all-purpose flour
  • 2 ounces (heaping 1/4 cup) granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup freeze-dried fruit (chopped if larger pieces)
  • To Make Muffins
  • 1 jar muffin mix
  • 4 ounces (1/2 cup) milk or buttermilk
  • 2 ounces (1/2 stick or 4 tablespoons) unsalted butter, melted
  • 1 large egg

Instructions

  1. To assemble the muffin mix, simply layer the ingredients in a pint-sized Mason jar. Add a label and a lid and store in a cool, dry place.
  2. To make the muffins: preheat the oven to 350 degrees. Spray 5 cups of a 6-cup muffin pan with nonstick spray or line with paper liners.
  3. Dump the jar of muffin mix into a large mixing bowl. Add the milk/buttermilk, melted butter, and egg. Mix until just combined.
  4. Scoop the muffin mix into the prepared pan (a 1/4 cup cookie scoop is great for this). Bake for 25-30 minutes. Serve hot or allow to cool on a wire rack. Store in an airtight container.

I’ve had some sleep issues for several years now. It’s not that I don’t sleep/can’t sleep, it’s that after a period of stress where I had some trouble falling asleep several years back I developed an inability to fall asleep in my bed. It’s crazy and irritating but I fall asleep every.single.night. in front of the television watching cooking shows and get up at some point during the night to get in bed. I really need to see a sleep specialist. I’ll get around to it sometime.

Anyway, the main things that I watch are America’s Test Kitchen and Cook’s Country on AmazonPrime. Unfortunately, only one season of each is available with my Prime membership, so I’ve watched every single episode approximately a zillion times. Being from the South, I had never even heard of black and white cookies until I worked at a bagel shop when I was in college. We sold them alongside regular chocolate chip cookies and chocolate chocolate chip cookies and all types of muffins in our case. While they were pretty and intriguing, I never, ever even considered buying a black and white cookie to take home or to eat with my lunch over a chocolate chip cookie. Are you joking?

Apparently, black and white cookies are a New York tradition. They’ve even been mentioned on Seinfeld. The Cook’s Country version is soft and cakey, and with the addition of peppermint extract and crushed starlight mints, these peppermint black and white cookies are a pretty irresistible holiday treat.

They’re easy to make and so pretty, so why wouldn’t you want to make peppermint black and white cookies this Christmas?

Ingredients

    Cookies
  • 1 3/4 cup (8 3/4 ounces) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 10 tablespoons butter, at room temperature
  • 1 cup (7 ounces) granulated sugar
  • 1 large egg
  • 2 teaspoons peppermint extract
  • 1/3 cup sour cream
  • 1/2 cup peppermint candies (aka starlight mints), crushed
  • For the Glaze and Topping
  • 5 cups (20 ounces) confectioners' sugar
  • 7 - 9 tablespoons whole milk
  • 2 tablespoons corn syrup
  • 1 teaspoon peppermint extract
  • 1/2 teaspoon salt
  • 3 tablespoons Dutch-processed or dark cocoa (I used Hershey's Special Dark)
  • 1/2 cup peppermint candies (starlight mints), crushed

Instructions

  1. Set oven racks to upper and lower middle positions and preheat the oven to 350 degrees. Line two baking sheets with parchment paper and set aside.
  2. Whisk together the flour, baking powder, baking soda, and salt. Set aside. Using an electric mixer on medium-high speed, cream together the butter and sugar until pale and fluffy, about 2 minutes. Scrape down the sides of the bowl and beat in the egg and the peppermint extract until combined.
  3. Scrape down the sides of the bowl again. Beat in 1/3 of the flour mixture then half of the sour cream. Repeat until all ingredients have been added. Stir in the crushed peppermints.
  4. Use a 1/4 cup cookie scoop or measuring cup to measure out the cookie dough. Place balls of dough 3 inches apart on baking sheets. Bake for 15-18 minutes, rotating pans halfway through baking, until lightly browned around the edges. Cool on pans for 5 minutes then transfer to cooling racks until completely cooled, about an hour.
  5. To make the whisk, whisk together the confectioners' sugar, corn syrup, peppermint extract, and 6 tablespoons of the milk until a glaze forms. You can add one more tablespoon of milk to thin if necessary (I did). Transfer 1 cup of the glaze to another bowl and whisk in the cocoa and 1-2 more tablespoons of the milk.
  6. Ice half of each cookie with 1 tablespoon of glaze (you may not use the whole tablespoon). Sprinkle with crushed peppermint. Refrigerate for 15 minutes or freeze for 5 minutes to set the glaze. Ice the other half of each cookie with about 1 tablespoon of chocolate glaze then sprinkle with peppermint. Let stand for about an hour before serving.
  7. Cookies will keep at room temperature for 2-3 days.
