Rosemary Roasted Cashews

Ingredients
- 1 1/4lb unsalted raw cashews or cashew pieces
- 2 tablespoons melted unsalted cutter or a mixture of butter and olive oil
- 2 tablespoons fresh rosemary (chopped)
- 2 teaspoons kosher or sea salt
- 1 teaspoon garlic powder
- 2 teaspoons maple syrup or brown sugar
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon chipotle chili powder

Preheat oven to 375 degrees. | |

Spread cashews on a dry baking sheet. Roast in preheated oven for ten minutes. They will begin to turn light brown and you will be able to smell the scent intensifying. | |

Meanwhile, in a large bowl, combine the melted butter, olive oil (if using), rosemary, salt, maple syrup, garlic salt, paprika, and chipotle chili powder. Add the cashews and stir until the cashews are completely coated. | |

Serve warm or at room temperature. Store in an airtight container (I use a glass jar). |
