Cream of Broccoli Soup

Ingredients
- 1/2 Medium onion (chopped)
- 2 tablespoons unsalted butter
- 2-3 Medium stalks broccoli (florets chopped and stems peeled and chopped)
- 2 cups chicken or vegetable stock
- 1/4-1/2 cup flour
- 2 cups milk
- salt and pepper
Directions

Melt the butter in a large pot over medium heat. Sauté the onions until they are softened and translucent. | |

Add the broccoli to the pot and stir to coat with the butter. Pour the chicken broth over and bring to a simmer. Cook until the broccoli is soft. Use an immersion blender to puree or puree in batches in a regular blender. | |
Step 3 | |
Shake the flour and milk together in a jar or other tightly covered container. Pour into the pot and cook until thickened. | |

Salt and pepper to taste. Serve with bread of your choice. |
