Cream of Broccoli Soup

Cream of Broccoli Soup

Ingredients

  • 1/2 Medium onion (chopped)
  • 2 tablespoons unsalted butter
  • 2-3 Medium stalks broccoli (florets chopped and stems peeled and chopped)
  • 2 cups chicken or vegetable stock
  • 1/4-1/2 cup flour
  • 2 cups milk
  • salt and pepper

Directions

Step 1
Melt the butter in a large pot over medium heat. Sauté the onions until they are softened and translucent.
Step 2
Add the broccoli to the pot and stir to coat with the butter. Pour the chicken broth over and bring to a simmer. Cook until the broccoli is soft. Use an immersion blender to puree or puree in batches in a regular blender.
Step 3
Shake the flour and milk together in a jar or other tightly covered container. Pour into the pot and cook until thickened.
Step 4
Salt and pepper to taste. Serve with bread of your choice.
