Chocolate-Orange Popovers with Orange Curd

Ingredients
- 1 cup minus 2 tablespoons flour
- 1/3 cup sugar
- pinch salt
- 2 tablespoons cocoa powder (I used Hershey's Dark)
- 1/2 cup milk
- 1/2 cup buttermilk
- 3 Large eggs
- 1 teaspoon orange extract (optional, but will increase the "orange-y" flavor)
- grated zest of one orange
- 2 tablespoons unsalted butter
- orange curd (for serving)
Directions

Preheat the oven to 375 degrees. When the oven has preheated, divide the butter among the popover cups, ramekins, or muffin cups then set in the oven. | |

Whisk the flour, sugar, cocoa, and salt together in a large bowl. | |

Whisk the milk, buttermilk, eggs, extract, and zest in a medium bowl. Pour over the dry ingredients and whisk until completely combined. | |

Divide the batter among the popover cups, ramekins, or muffin cups. Bake at 375 degrees for 5 minutes then reduce heat to 350 degrees and bake for another 20 minutes. | |

Serve immediately topped with orange curd. |
