Chocolate-Orange Popovers with Orange Curd

Ingredients

  • 1 cup minus 2 tablespoons flour
  • 1/3 cup sugar
  • pinch salt
  • 2 tablespoons cocoa powder (I used Hershey's Dark)
  • 1/2 cup milk
  • 1/2 cup buttermilk
  • 3 Large eggs
  • 1 teaspoon orange extract (optional, but will increase the "orange-y" flavor)
  • grated zest of one orange
  • 2 tablespoons unsalted butter
  • orange curd (for serving)

Directions

Step 1
Preheat the oven to 375 degrees. When the oven has preheated, divide the butter among the popover cups, ramekins, or muffin cups then set in the oven.
Step 2
Whisk the flour, sugar, cocoa, and salt together in a large bowl.
Step 3
Whisk the milk, buttermilk, eggs, extract, and zest in a medium bowl. Pour over the dry ingredients and whisk until completely combined.
Step 4
Divide the batter among the popover cups, ramekins, or muffin cups. Bake at 375 degrees for 5 minutes then reduce heat to 350 degrees and bake for another 20 minutes.
Step 5
Serve immediately topped with orange curd.
