5-Ingredient Eggnog

Ingredients

  • 6 Large eggs
  • 2 Large egg yolks
  • 3/4 cups maple syrup
  • 4 cups whole milk
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon nutmeg (plus more for sprinkling)

Directions

Step 1
Whisk the eggs, yolks, and maple syrup together in a large saucepan until well combined.
Step 2
Gradually whisk the milk into the egg and syrup mixture until fully incorporated. Heat over medium-low, stirring frequently, until the mixture thickens and reaches 160 degrees (measure using a candy thermometer or, in a pinch, an instant-read thermometer).
Step 3
Strain the eggnog through a fine-mesh strainer. Stir in the vanilla and the nutmeg. Chill thoroughly before serving (Carrie's recipe says at least 3 hours, but we let ours chill for 4 and it really could have used a little more time). Serve with additional nutmeg sprinkled on top, if desired (we use only fresh nutmeg, which isn't even in the same category as the preground stuff. Really.).
