Quick Buffalo chicken dip is ready in less than thirty minutes and it’s sure to be a hit with all the guests at your next party!
I’ve really been trying to stretch my taste preferences lately. For example, I’ve been leaving raw onions in/on things that I eat at restaurants. If you’ve read my blog much at all, you know that’s a big deal. Eating raw onions brings tears to my eyes, and not in a good way. I haven’t eaten a whole ring on a sandwich yet or anything, but I definitely ate way more chunks of raw onions in my pico at Mojo Burrito Saturday than I would have eaten a few weeks ago. Baby steps, people. Baby steps.
Likewise, I’ve been eating more things “Buffalo” lately. I’ve never despised wings or anything, but I’ve definitely never been one to order them at a restaurant. They’re messy, I’m always concerned they’ll be hotter than I anticipate (when you’re wimpy like me, too spicy can ruin your meal), and I can never seem to get all the meat off of them. It’s that darned overbite….but I digress. The Buffalo chicken pizza at The Pizza Place a few weeks ago got me thinking a little more about Buffalo. I ordered chicken strips at Zaxby’s with “wimpy” Buffalo sauce a couple of weeks ago. And then, there was this recipe.
I saw the inspiration for this quick Buffalo chicken dip on Pinterest, of course. You can look at my “Snack Attack!” board and see that I have a bit of an obsession with dips as it is. I actually found this dip when I clicked on a pin of another dip that Robyn, the blogger at Add a Pinch, had posted: poppy seed chicken dip. Like chicken casserole in dip form. Shut your mouth. Yum. Anyway, I figured that with the cream cheese and blue cheese dressing to up the cooling factor, I could safely push the envelope a little bit. I was right.
This quick Buffalo chicken dip is wonderful. The cream cheese and dressing amp up the super-creamy factor while balancing the heat of the hot sauce, and the grated cheddar and blue cheese crumbles add a little sharpness. Add crispy celery and crunchy tortilla chips, and you have a perfect game-day recipe, party snack, or even a late-in-the-evening quickie meal, which is how we ate it. Also, I had some readers ask about substitutes for blue cheese in my kale & blue cheese dip recipe, so I’ll give you some subs here too….if you don’t like blue cheese dressing, just sub in ranch dressing and add a little more cheddar cheese on top instead of blue cheese crumbles. See? That was easy!
Try this quick Buffalo chicken dip! Your party guests – and you – will love it!

- 8oz cream cheese (softened)
- 3/4 cups cooked shredded chicken
- 3/4 cups shredded cheddar cheese
- 1/2 cup blue cheese dressing (I used homemade)
- 1/4 Cup plus 2 tablespoons hot sauce (I used Texas Pete)
- blue cheese crumbles
- Preheat oven to 350 degrees.
- Combine cream cheese, chicken, 1/2 cup cheddar, blue cheese dressing, and hot sauce until well combined (I used the paddle attachment on my stand mixer). Spread into a small baking dish and sprinkle remaining cheddar cheese over the top.
- Bake for 20 minutes. Sprinkle top with blue cheese crumbles. Serve with celery sticks, tortilla chips, pita chips, crackers, etc.
If you don't like blue cheese, just sub ranch dressing for the blue cheese dressing and add a little more shredded cheddar to the top of the dip.
