Searching For a Sandwich…

Have you ever been craving a food so much that you would go to just about any length to make it? We re-watched the movie Chef on Christmas Eve, and I have been wanting a Cuban sandwich ever since. There’s really no sandwich that compares to a Cuban…roasted pork, ham, swiss cheese, pickles, and mustard on Cuban bread. We went to Ceniza while I was on break but…I forgot that they don’t open until dinner time during the week.

Save Time By Making Mojo Pork in the Instant Pot!

So, I had to resort to my own resources. I had watched a Binging with Babish video where he made a perfectly roasted mojo pork shoulder that he marinated with about a million ingredients then rubbed with a million more. Looked amazing but that’s a few too many ingredients for me. This Instant Pot mojo pork is a little more my style. Just a few ingredients that I can throw together in about ten minutes and cook in about an hour, start to finish. I don’t claim that this is an authentic recipe but it does have amazing mojo flavors: garlic, citrus, and pork shoulders.

Instant Pot mojo pork is perfect for Cuban sandwiches but it’s also great for tacos, burritos, or just as the meat mean dish on your plate. Warning: there are 8 cloves of garlic in this and your Instant Pot sealing ring is going to be super-stinky. Store the lid upside down or separate from the pot to minimize the stink!

Instant Pot Mojo Pork

Ingredients

  • 2-3 pound pork shoulder, boneless or meat cut off the bone, cut into 4-6 pieces with large chunks of fat trimmed away
  • salt and pepper
  • 1/3 cup orange juice
  • 1/3 cup lime juice
  • 8 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried cumin

Instructions

  1. Salt and pepper both sides of the pork pieces. Place the pork in the Instant Pot.
  2. Whisk together the orange juice, lime juice, garlic, oregano, and cumin. Pour over the meat in the Instant Pot.
  3. Place the lid on the Instant Pot and set the vent to sealing. Select the manual or pressure setting and set the time to 25 minutes.
  4. When the cook time on the Instant Pot is up, press the "cancel" button to turn the Instant Pot off. Allow the Instant Pot to depressurize naturally.
  5. When the float valve drops, remove the lid and use tongs to remove the meat from the Instant Pot to a cutting board. Turn the Instant Pot to sauté and allow the liquid to reduce while you shred the meat.
  6. Place the meat in a bowl and pour the reduced liquid over the meat. Serve as desired.

Notes

Cook time includes the time to allow the Instant Pot to come to pressure and depressurize naturally. It may take slightly more or less time depending on the temperature of your ingredients, altitude, etc. This recipe can also be made in the slow cooker - just place the meat and the sauce ingredients in your slow cooker and cook on low for 8-10 hours, until tender.

New Instant Pot?

Anyway, if you got a new Instant Pot for Christmas but haven’t quite had the courage to start using it yet, you’re going to want to do the Instant Pot water test. I bought a new Instant Pot – the Instant Pot Ultra 60 – last week so I can try some fun experiments with an Instant Pot that’s a little fancier than the Duo 60 I’ve been using (and loving) for the last 2+ years. The first thing that I needed to do before cooking in it was a water test.

Why Water Test Your Instant Pot?

The purpose of the Instant Pot water test is to make sure that your Instant Pot seals, comes to pressure, counts down, and depressurizes like it’s supposed to without the threat of wasting some perfectly good food. The User’s Manual says that it’s optional, but why wouldn’t you do it?
It takes less than half an hour then you’re ready to cook!

Water Testing is Easy!

All you need to do is:
1) Make sure that your inner pot and sealing ring are in place (do people actually try to cook without the inner pot? I’m sure it has happened.).
2) Pour in 3 cups of water (if you use water that is already hot, it will slightly decrease the amount of time it will take your Instant Pot to come to pressure).
3) Place the lid on your Instant Pot and lock it into place.
4) Make sure that the steam release valve on your Instant Pot is set to “sealing” (how to do this will vary based on what model you have).
5) Select the “steam” function by pressing the “steam” button or using the central control button to select “steam”.
6) Set the time for two minutes and press the “start” button. The Instant Pot will display “on” until it comes to full pressure. At this point the float valve will be in the up position and the timer will begin counting down.
7) When the time is up, your Instant Pot will beep. Press the “cancel” or “keep warm/cancel” button to turn the Instant Pot off.
8) Stand back and quick release the steam.

Your Instant Pot is water-tested and ready to cook now!

Rice is one of those super-basic dishes that most people seem to cook all the time as a side dish or as a base for a main dish. Truth be told, though, before I got my Instant Pot, I rarely cooked rice. I really can’t explain it…it certainly isn’t like it’s difficult to boil a little water on the stovetop, throw in some rice, salt, and butter, lid up, and let it simmer for a bit. For some reason it just seemed like a pain to me, which I know is completely ridiculous.

Cooking rice in the Instant Pot, though, changed my life. Well, that might be a little dramatic…but I love cooking rice in the Instant Pot and now I do it all the time. There is a rice setting on the Instant Pot, but I never use it. I find that when I cook rice using the rice setting that it gets a little gummy. You could definitely change the time setting, but I just use the manual setting (because that’s what I do for most things).

To get rice that’s just a little firm to the tooth, cook it for three minutes. If you like your rice a little softer, go for four minutes. This recipe is just for white rice, so you’ll need to up the time for brown rice (I’ll do a video on that later). For this recipe, you’ll use a quick release of the steam (turn the steam release handle from sealing to venting rather than letting the Instant Pot depressurize naturally).

Perfect white rice in the slow cooker is easy and (relatively) quick to make. It’s a pressure setting so you do have to wait a little bit for it to come to pressure, but it doesn’t take that long. All you need is water, rice, salt, and butter, and there you go – perfect white rice!

Ingredients

  • 1 cup long grain white rice
  • 1 cup water
  • 1/2 teaspoon of salt (optional)
  • 1 tablespoon unsalted butter (optional)

Instructions

  1. Place all ingredients into the Instant Pot. Place the lid and set the steam release handle to sealing.
  2. Press the "manual" button. Use the "-" button to set the time to 3 minutes for firmer rice or 4 minutes for slightly softer rice.
  3. When the Instant Pot beeps, press the "keep warm/cancel" button to turn the Instant Pot off. Carefully turn the steam release handle to venting, standing away from the Instant Pot to avoid the steam. When the float valve drops, remove the lid and fluff the rice with a fork. Serve immediately.

Notes

Amounts can be increased to make more rice. Just use equal parts rice and water and slightly adjust the salt and butter amounts accordingly.

For the new year, I thought that I would focus a little more on Instant Pot and one-pot/one-pan cooking. A lot of you have told me that you follow Chattavore for Instant Pot recipes, so I want to give the people what they want! This includes an overhaul of my YouTube channel to focus on Instant Pot techniques and recipes. Step one: getting to know your Instant Pot.

What Does Everything Mean?

On the front of your Instant Pot, there’s a control panel. You can choose a mode depending on what you are cooking, or you can steam, slow cook, sauté, or make yogurt. Truth be told, I generally use the manual setting when I am pressure cooking. The “pressure” button allows you to set low or high pressure (the Instant Pot defaults to high pressure). The adjust button allows you to select a temperature (less/normal/more in slow cook or sauté mode). The +/- buttons allow you to set the cook time. Finally, you can use the “timer” button to set a start time for your Instant Pot. The keep warm/cancel button allows you to turn your Instant Pot off after your cook time ends or set it to hold your food warm for a specific amount of time.

On top of the Instant Pot lid, there is a steam release handle. All of the pressure modes (including rice and steam) require you to use the steam release handle in the “sealing” mode. You can turn the handle to “venting” to quick release the steam. Next to the steam release handle is the float valve. When the float valve is in the “up” position, that means that your Instant Pot is fully pressurized. You will not be able to open the Instant Pot until the pressure has released, which can be achieved by moving the steam release handle to “venting” until the float valve drops or by allowing the Instant Pot to stand after the cook time ends until the float valve drops on its own.

On the underside of the Instant Pot lid, the anti-block shield prevents the float valve and exhaust valve from getting gummed up. Newer models have a round anti-block shield that only covers the steam release valve. Under the anti-block shield, the float valve is on the left and the exhaust/steam release valve is on the right. The sealing ring around the inner edge of the lid aids in sealing and must be in place for the Instant Pot to seal.

Pro-tip: store the lid upside down on top of the Instant Pot OR separate from the Instant Pot to keep smelliness at bay.

Instant Pot Accessories

There are several accessories included with the Instant Pot. A measuring cup (not a standard measuring cup) is included to allow you to measure water and grains. The utensil on the left is a soup ladle and the utensil on the right is a rice paddle. A steamer rack is included. You can set large pieces of food on top of the steamer rack to cook or steam or you can set another steamer rack on top of it.

I❤Instant Pot

Oh hey, have I mentioned that I have a little obsession with my Instant Pot (<–affiliate link)? Okay, good. I’m just making sure that you all know about this awesome countertop appliance that feeds us at least once a week, usually more.

Anyway, this post is not really to harp on and on about how much I love the Instant Pot. It’s to share this Instant Pot butternut squash & sausage pasta with you. These days I just about always cook my pasta in the Instant Pot or using a one-pot method. When a friend told me about a recipe from The Chew that had pasta, cheese, sausage, and butternut squash, I knew I had to adapt it for the Instant Pot.

Chicken & Apple Sausage

I don’t love Italian sausage but if you do, feel free to use it here. That’s what was in the original recipe. I used chicken and apple sausage; I like the sweetness and the warm spices. A little cottage cheese or ricotta stirred in gives it extra creaminess, and instead of wrestling with a whole butternut squash on a weeknight I just dump in a bag of frozen, cubed butternut squash.

Ingredients

  • 2 tablespoons olive oil
  • 1/2 medium onion, minced
  • 1 package chicken & apple sausage (4 sausages), cut into rounds
  • 8 ounces mini farfalle (bowtie) pasta or another small pasta shape
  • 1/2 teaspoon salt
  • 1 1/2 cups water (or enough to cover the pasta)
  • 1/2 cup cottage cheese or ricotta cheese
  • 4 ounces fresh mozzarella, cubed
  • 1 pound frozen cubed butternut squash
  • several fresh sage leaves, cut in chiffonade
  • more salt, to taste

Instructions

  1. Press the sauté on the front of the Instant Pot. When the Instant Pot gets hot, add the olive oil. When the olive oil shimmers, add the onion and cook until beginning to turn translucent. Add the sausage and cook until lightly browned.
  2. Add the pasta to the Instant Pot. Add just enough water to cover the pasta/sausage mixture. Stir to combine. Cover with the lid and set the vent to "sealing". Press the manual button then use the - button to set the time to 4 minutes.
  3. When the cook time is complete, press the off button and turn the vent back to venting. Remove the lid and add the cottage cheese, mozzarella, and butternut squash and stir to combine. Press the sauté button and cook, stirring frequently, until the squash is warm.
  4. Add the sage and salt to taste. Stir to combine and serve immediately.

Notes

Cook time includes time for the Instant Pot to reach pressure.
