The Best Rice Krispies Treats

Rice Krispies treats have always been fine in my book. Not my favorite. Just fine. Just okay. That is, until I tried Smitten Kitchen’s Rice Krispies treats. Salted brown butter Rice Krispies treats. They are sheer perfection. They are my contribution to 90% of potlucks and birthday parties. They are, simply put, the best version of Rice Krispies treats out there, especially zhuzzed up with just a tiny bit more salt than the original recipe. Ah, yes.

What Makes These Rice Krispies Treats So Amazing? 

  1. Double butter. They’re totally healthy. Got it? Butter is health food. The extra butter makes them so rich but also it makes the texture absolutely amazing.
  2. Browning the butter. Shhhhhh. Trust me. This adds a depth of flavor that you won’t even believe, and if you are willing to stand and watch the butter for five minutes so it doesn’t burn, it’s totally easy too.
  3. Salt. Just a little bit. I love a sweet and salty vibe. Did you know that salt intensifies flavors? Don’t leave it out here.
  4. Using a small pan. Usually, this size recipe for RKTs would be made in a 9×13 inch pan. I make them in an 8×8 inch pan so they are double thick. Combined with the double butter, this makes the texture of these RKTs out of this world.

How Do You Make Salted Brown Butter Rice Krispies Treats?

Glad you asked! They’re so easy!

  1. Butter an 8×8-inch square baking pan.
  2. Place one stick (4 ounces or 8 tablespoons) of unsalted butter in a heavy-bottomed pan over medium heat. Cook, stirring/swirling frequently, until the butter is golden brown. Don’t turn your back – it will burn in an instant!
  3. Stir in 1 1/2 teaspoons of kosher salt (or 3/4 teaspoon of table salt, which is much saltier than kosher salt).
  4. Add 10 ounces of mini marshmallows.
  5. Stir the marshmallows until completely melted. I find it helpful to place the pan back over medium heat to help the marshmallows melt.
  6. Stir in 6 ounces (half of a regular size box) of crisped rice cereal. I am not brand loyal. This is about 5 1/2 cups of cereal.
  7. Turn the mixture into the buttered pan.
  8. Use the butter wrapper to press the mixture into the pan.
  9. Cool the treats completely. Turn them out onto a cutting board and cut into 16 squares.

Ingredients

  • 1 stick unsalted butter plus more for buttering the pan
  • 1 bag miniature marshmallows
  • 1 teaspoon kosher or sea salt
  • 6 ounces (1/2 of a regular size box) crisped rice cereal

Instructions

  1. Generously butter an 8 x 8 dish.
  2. Place the stick of butter into a Dutch oven over medium heat. Don't throw away the wrapper-I like to smear a little bit of the butter that I used to butter the pan onto the wrapper (I'll use this at the end).
  3. Cook the butter, stirring frequently, until browned bits separate and the butter stops foaming. Don't walk away or you'll burn the butter!
  4. Stir in the marshmallows and the salt. Stir until completely melted and smooth and remove from heat.
  5. Add the cereal and stir until completely coated with the marshmallows. Spread into the buttered pan. Use the buttered wrapper to press the mixture into the pan.
  6. Allow the Rice Krispies treats to cool completely. Turn out of the pan and cut into squares.

Perfect Christmas Appetizer!

To me, Christmas season is cheese ball season. Woe is the holiday gathering that does not have at least one cheese ball for me to dip a zillion crackers into. Have I told you the story about the work Christmas party where my BFF and I ate approximately 3/4 of the mango chutney cheese ball so that we could avoid uncomfortable interactions with our coworkers? I’m pretty sure I have (I definitely did in the story about this other easy cheese ball recipe) I am definitely a “linger by the refreshment table” sort of girl. It’s a blessing and a curse, really.

I certainly do not need a holiday or a party to enjoy a cheese ball, though. Show me any random Saturday night and I will show you a cream cheese based snack that Philip and I can enjoy in front of our favorite shows on Hulu. Actually, we enjoyed this jalapeño popper on the Wednesday night before Thanksgiving, when I had been cooking all afternoon and just couldn’t quite bring myself to assemble a full meal. And then again for a mini-lunch on Thanksgiving day, because my family ate late in the day.

Vintage Appetizer Recipes

Cheese balls seem pretty kitschy, and I’m sure that you could dig around in your mom or grandma or even great-grandma’s recipe file and find a few cheese ball recipes. You know what, though? Kitschy food can still be darn tasty, and I promise you that I’m only on board for flavor. I don’t care too much about trends (though I’ll hop on board if they’re delicious). You probably won’t catch me posting any aspics on here, but I will never apologize for my cheese balls.

Easy Cheese Ball Recipe

My jalapeño cheese ball has all the flavors that I think that a perfect jalapeño popper should have:

  • jalapeños (duh)
  • cream cheese
  • cheddar cheese
  • bacon
  • ranch.

There’s no stuffing, roasting, grilling, or frying involved, though, and that makes this easy cheese ball approximately 1 million times easier and less mess than an actual jalapeño popper.

I used canned diced jalapeños, which meant that I didn’t have to slice and dice a bunch of peppers, but you could definitely sub in 1/2 cup of diced fresh jalapeños, or add them to the canned peppers to increase the spice level if you’re brave. Me, I found the faint tinge of spice provided by the canned peppers to be perfect for my wimpy taste buds.

But you…you can feel free to customize this jalapeño cheese ball to meet your spice needs! You could also try my Reuben cheese ball for something completely unexpected!

Jalapeño Popper Cheese Ball

Ingredients

  • 2 8-ounce packages cream cheese, at room temperature
  • 8 ounces (2 cups) shredded cheddar cheese
  • 6 strips bacon, cooked and crumbled
  • 4 ounce can diced jalapeños, drained
  • 4 ounce can diced fire-roasted green chilies, drained
  • 1 cup chopped pecans
  • For the ranch seasoning (can sub in 2 packages of ranch dressing mix, like Hidden Valley)
  • 3 tablespoons dried parsley
  • 1 tablespoon dried dill
  • 1 tablespoon dried chives
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 1/2 teaspoon salt

Instructions

  1. Place all ingredients, including ranch seasoning ingredients, EXCEPT pecans, in a large bowl. Stir until well combined (I used my Kitchenaid mixer with the paddle attachment on low speed to do this). Form into a ball and roll in the chopped pecans until thoroughly coated. Chill for at least an hour. Serve with crackers.

Notes

I did not include the time to cook the bacon in the prep/cook time.

Chocolate Chips > Raisins X Infinity

Raise your hand if you’ve ever been disappointed – no, angered – by biting into what you thought was an oatmeal chocolate chip cookie and finding out that it was, in fact, an oatmeal raisin cookie.??This has happened to me an unfortunate number of times. Honestly, I don’t know why anyone puts raisins in oatmeal cookies when they could use chocolate chips (anyone? anyone?).

One-Bowl Cookies!

But then…I strongly dislike raisins. Not to the point that I will flatly refuse to eat them (though I am probably going to toss an oatmeal raisin cookie – cookies are treats, you guys). I just. don’t. like them. What I do like? These one bowl oatmeal chocolate chip cookies. That’s right: one bowl. You stir everything in the same bowl, chill it for a bit, then scoop out your one bowl oatmeal chocolate chip cookies and bake them off. The result is a thin, slightly lacy, and chewy cookie that’s so easy it’s irresistible. Milk optional (but is it REALLY??).

Ingredients

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/3 cup granulated sugar
  • 1/3 cup brown sugar (light or dark are fine)
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 3/4 cup all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 375 degrees and line two baking sheets with parchment paper.
  2. In a medium mixing bowl, mash the softened butter with a wooden spoon until it is stirrable. Add the granulated and brown sugar and stir until combined. Add the egg and vanilla and stir until combined.
  3. Add the oats, flour, baking soda, and salt to the butter mixture and stir until all of the ingredients are moistened and the oats are evenly distributed. Add the chocolate chips and stir to distribute. Cover and refrigerate for at least 30 minutes.
  4. Scoop the cookies out onto the baking sheets (I use a 2-inch cookie scoop, which is about 1 1/2 tablespoons of dough). Bake for 8-10 minutes, rotating the pans once during baking. Allow to cool completely on a wire rack before serving.

Notes

Prep time does not include 30 minute chill time.

Quick Southern Green Beans?

No. Quick Southern green beans is not an oxymoron. You can indeed make green beans that are tender, with the flavor of bacon (or ham, if that’s more your thing) and perfectly seasoned in just a little more than thirty minutes.  I am not joking.
I’ve lived in Tennessee my entire life.  Every potluck, every church dinner, every holiday, and, yes, every post-funeral meal, involves slow-cooked Southern-style green beans.  Sometimes there is onion, or, like my grandmother used to do, there might be peeled new potatoes.  But always, always, there is ham hock involved.  And lots of simmering.  Those are the magic ingredients, and until maybe about a year ago I thought that if you took away either of those ingredients, well, you could not have true Southern green beans. My Recipe!

I have no idea the origin of this recipe or honestly even if my recipe is anything like the original, but my mom made something like this a while back and a month or two later I started making this on a regular basis, using my memory of what she told me was in the green beans she made.  The bacon and onion take 5-10 minutes, then simmering the green beans takes about twenty minutes, and another 5-10 minutes to reduce the liquid.  I like to add a brown sugar glaze, but if you don’t want to do that, well, don’t (though I encourage you to try it at least once.  It’s amazing.).

Ingredients

  • 4 Strips thick-cut bacon (sliced into 1/4 inch pieces)
  • 1 Small onion (sliced into half-moons)
  • 1 Pound green beans (trimmed and cut into manageable lengths)
  • 2 Cups chicken stock (low-sodium or homemade)
  • 1/4 cup brown sugar (optional but highly recommended!)
  • salt and pepper (to taste)

Instructions

  1. Preheat a medium saucepan (I used a 10-inch cast-iron skillet) over medium heat. Place the bacon into the pan and cook until almost crisp. Add the onions and cook until they are tender and translucent.
  2. Add the green beans and the chicken stock to the pan. Bring to a simmer, reduce heat to medium-low, cover, and simmer for about twenty minutes or until tender, stirring occasionally.
  3. Remove the lid and raise the heat to medium-high. Simmer vigorously until most of the liquid has evaporated.
  4. If using, add the brown sugar, stir to coat, and allow to cook until the brown sugar makes a "glaze" on the green beans-two to three minutes. Season with salt and pepper to taste. Serve immediately.

Notes

To make these green beans in the Instant Pot, set the Instant Pot to sauté. Cook the bacon until almost crisp. Add the onions and cook until just turning translucent. Turn the Instant Pot off. Add the green beans and chicken stock. Cover with the Instant Pot lid and set the vent to sealing. Select the pressure cook setting and set the time for three minutes. When the cook time is complete, turn the Instant Pot off and quick release the pressure. Set the Instant Pot back to sauté. Cook, stirring frequently, until the liquid has reduced. Add the brown sugar and cook for 1-2 minutes to glaze the green beans. Salt and pepper to taste.

Christmas Perfection!

Last Christmas, an article on Snapchat alerted me to something wonderful: peppermint ice cream served in white chocolate and peppermint tipped waffle cones at Disney World. These cones are only available during the holiday season. Let me tell you – I was immediately smitten and decided that this Christmas I would have to recreate this at home.

Authentic? Who Cares?

Now, I haven’t actually had the Disney World version (actually Edy’s/Dreyer’s ice cream) but who cares? Peppermint ice cream in peppermint ice cream cones? Yes. Please. I decided to go for sugar cones instead of waffle cones because I like to be a little more moderate with my desserts but I feel pretty confident that sugar cones are just as great of a medium for chocolate peppermint ice cream cones as waffle cones.

Ingredients

  • 12 sugar cones
  • 1 cup chocolate chips or white chocolate chips (or 1/2 cup each)
  • 6 candy canes, crushed

Instructions

  1. Line a sheet pan with waxed paper. Place the crushed candy canes into a narrow, deep bowl.
  2. Pour the chocolate or white chocolate chips into narrow, deep bowls. Microwave at 50% power for 30 seconds at a time, stirring after each interval, until completely melted.
  3. Dip the tops of each ice cream cone into the melted chocolate. Swirl to allow excess to drip off. Dip into the peppermint and place onto the waxed paper lined baking sheet. Allow to stand until chocolate hardens. Serve with your favorite ice cream!
