I am sure that many of you have seen memes showing coffee mugs with a “you may talk to me NOW” indicator near the bottom of the mug. I get it…some days I need a caffeine boost to get me going too. For me, though, coffee is not usually about the caffeine. It’s about the ritual.

In high school, I really didn’t care for coffee. Then in college, it became an essential, since I would fall asleep in my first class of the day if I didn’t have a cup. I once had a professor scold me for nodding off during a classmate’s presentation. It was a great presentation…I just hadn’t had my coffee. After Philip and I got married, though, coffee became about flavor…about brewing a perfect cup and drinking it slowly on the couch (well, I’d drink it slowly…he sucks his down. I don’t get it.). Honestly, there are few things that I love more than going to a store that sells whole coffee beans and sticking my nose into a bin of oily dark-roasted beans. Lately, I’ve become more than a little obsessed with mixing up coffeehouse style drinks at home – I’ve never cared much for paying $5 a drink but dang they taste good. I love to make my own flavored syrups or mix different spices or extracts with sugar and cocoa to make mochas – like this Mexican hot chocolate mocha.

A lot of times, we grind our beans fresh, but sometimes I just want to get some great coffee in the basket so I can get a great cup in my hand. This Folgers®Coffeehouse Blend is a delicious way to get some rich, medium-dark roasted coffee in your cup in a jiffy (by the way, did you know that it’s a myth that dark-roasted coffee has more caffeine? On the contrary, the darker the roast, the less caffeine!). It’s great brewed in your coffeepot, which is what I did, but it’s also perfect for cold brews, French press, or pour overs.

You guys probably know that Publix is my grocery store of choice, and that’s where I picked up this container of Folgers®Coffeehouse Blend. To make my Mexican hot chocolate mocha, I brewed an extra strong pot of coffee (using double the grounds that I typically use). I made a Mexican hot chocolate “paste” with dark chocolate cocoa, sugar, cinnamon, and a little cayenne (you can leave it out if you don’t care for spicy flavors) with the coffee splashed in, then mixed in all the coffee and some hot milk. The flavor of the coffee still stands strong even with all the other bold flavors in the drink! My Mexican hot chocolate mocha is full of flavor and it’s a great way to open up your sinuses if you’ve been suffering with any of the illness that’s been going around!

Ingredients

  • 1 tablespoon cocoa powder (I use dark cocoa powder)
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon ground cinnamon
  • pinch cayenne pepper
  • 1/2 cup strong-brewed coffee, such as Folgers Coffeehouse Blend
  • 1 cup hot milk
  • whipped cream, for topping (optional)

Instructions

  1. Place the cocoa powder, sugar, cinnamon, and cayenne pepper in the bottom of a 16-ounce or larger coffee mug. Stir to combine.
  2. Splash in a small amount of the coffee and stir to create a paste. Slowly add a little bit more coffee and stir until all of the dry ingredients have been moistened. Stir in the rest of the coffee until completely combined.
  3. Stir in the hot milk until completely combined. Top with whipped cream if desired. Serve immediately.

Notes

To make strongly brewed coffee, use two standard-sized scoops of coffee for every cup of coffee marked on your coffee pot (remember that the cups on the coffee pot are 6-ounces - so you will use 2 scoops for every 6 ounces). I used 8 scoops for 4 cups of coffee.

Raise your hand if you’ve never heard of Cheerwine. I’ve honestly been surprised recently at how many people I’ve talked to that have no idea what Cheerwine is. Granted, these friends aren’t from around here, and Cheerwine is a decidedly Southern soda…so Cheerwine is to the South what Moxie is to the Northeast (have you ever had Moxie? It’s an acquired taste, but I love it).

Actually, Cheerwine has only been back in this area for a few years. I remember being obsessed with it as a kid, when the commercials boasted a teenage girl who talked like a Valley girl and wore clothes that my eighties elementary-aged self thought were so cool. My friends and I all loved it, and then…it disappeared. I didn’t even know it still existed until I went to North Carolina for a conference in my twenties and saw Cheerwine everywhere. Then, a couple of years ago, it reappeared.

Anyway, for those of you who don’t know, Cheerwine is a cherry-flavored soda. It’s pretty sweet (as sodas go, of course) but pretty tasty when you’re feeling like a sugar overload. I don’t buy it often, as it has caffeine (Philip doesn’t drink caffeine) and, er, high fructose corn syrup. And let me warn you, don’t trust a recipe that tells you to boil Cheerwine for an hour until it turns into a thick syrup (Really. Don’t. You will regret it and you will waste a bottle of Cheerwine).

Philip and I visited Asheville, North Carolina in October while I was on Fall break. We ate dinner one night at a restaurant called Bonfire Barbecue. The food was great – I had an awesome smoked turkey and pimento cheese sandwich – and, while the place was definitely not empty, being away from downtown gave it the advantage of not being completely packed out with people. The thing that really stuck in my head, though, was the Adult Cheerwine cocktail. Coke, whiskey, amaretto, and grenadine…adult Cheerwine popped right off the page at me and I knew I had to try it. It was perfect, and tasted more like actual Cheerwine than I could have imagined (by the way, did you know that most “cherry-flavored” things are actually almond-flavored???).

I decided that I needed to recreate the adult Cheerwine cocktail, and, of course, share it with you. I mean, it’s so easy, and it doesn’t require any unusual, crazy ingredients. That is, if you have a reasonably stocked liquor cabinet, there’s a good chance that you have what you need to make this Cheerwine cocktail.

Ingredients

  • ice
  • 1 ounce whiskey (I used Chattanooga Whiskey )
  • 1 ounce amaretto
  • 1/2 ounce grenadine
  • Coke or other cola (I used Mexican Coke, which does not contain high fructose corn syrup)
  • maraschino cherries and/or pomegranate arils, for garnish

Instructions

  1. Fill a 12-ounce glass halfway with ice. Pour in the whiskey, amaretto, and grenadine. Top the glass with the cola and stir to combine. Garnish with cherries and pomegranate arils, if desired. Serve immediately.

Notes

Pomegranate arils may seem like an odd garnish here, but grenadine is actually pomegranate flavored, not cherry-flavored! You can extract the arils from the pomegranate yourself - just cut the pomegranate in half and firmly slap each half with a wooden spoon over a bowl. OR, just buy a cup of prepackaged arils in the produce section of your grocery store.

I have mentioned here a time or two that I am not really a devotee of all things “pumpkin spice”. I’ve never had a pumpkin spice latte and at this point I don’t know if I ever will, mostly because I’m way too frugal for Starbucks. I don’t have anything against pumpkin spice, though. My issue is that I think that it’s kind of misleading to call things “pumpkin spice” when there’s generally no actual pumpkin in them. On the other hand, I ❤️puffy heart? love pumpkin. So, if there is actual pumpkin involved, I am down for pumpkin spice in whatever form.

Frozen hot chocolate is a phenomenon that started at a restaurant in New York City named Serendipity 3. I’ve never been there, but I’ve heard about their frrrozen hot chocolate for years and always thought it sounded intriguing. I once ordered a frozen hot chocolate at Nana’s (let’s all have a moment of silence for my favorite, sorely missed frozen custard joint – though there’s a new coffee shop there now that I must try soon) and it was pretty tasty but maybe a little too icy for me.

I found a Serendipity 3 cookbook at McKay’s a while back and was inspired by the recipe for their Frrrozen hot chocolate to make my own – but with pumpkin. And white chocolate. And, yes, pumpkin spice. I posted on my personal Facebook page about it, wondering if I should use white chocolate or chocolate chocolate and I got mixed reviews about the idea of making the pumpkin frozen hot chocolate at all; of the non-naysayers, though, white chocolate won the vote by a landslide.

As you can see, I went ahead and went all in for the pumpkin frozen white hot chocolate. I made the frozen white hot chocolate for the first time a few weeks ago, deciding that there was no need to melt the chocolate as called for in Serendipity 3’s recipe. I expected Philip to hate it; he’s not really a pumpkin fan. He didn’t, though. I decided it needed more pumpkin, so I made the pumpkin frozen white hot chocolate one more time, adding a bit more pumpkin. I decided that it’s the perfect fall treat around here, where the temps are still lingering near the eighties.

But really, as long as you bundle up, this pumpkin white hot chocolate is good anytime.

Ingredients

  • 1 1/2 cups milk
  • 3/4 cup pumpkin
  • 3 ounces white chocolate, broken into smaller pieces
  • 1 1/2 tablespoons granulated sugar
  • 1/2 teaspoon pumpkin pie spice (I used Alchemy Spice Wake & Bake Sweet Spice Blend)
  • 2 cups ice
  • whipped cream, ground nutmeg, and white chocolate shavings, for garnish

Instructions

  1. Layer all ingredients except for the garnish into a blender in the order listed. Blend on high speed until the ice is completely blended, stopping to stir as needed. Serve immediately with desired garnishes.

When I think of summer, produce is one of the recurring themes in my head. There are so many things that are in season in the summer, things that sure, you can buy them in January, but is it really going to be worth it? Tomatoes, blueberries, peaches, squash, okra…watermelon.?I mean, really – is there a more iconic summer fruit than watermelon? When I think of going to a picnic or cookout, I think of huge slices of watermelon, or maybe big chunks in a bowl to be doled out with a spoon. If you’re really fancy, you might even have one of those watermelon rind “boats” filled with balls of melon. I’m not fancy. I don’t own a melon baller, and I just chunk my watermelon.

Seriously, when I think about watermelon I can visualize kids gathered around a picnic table with big wedges of bright red fruit with green-striped rind in their hands, sticky juice running down their arms as they bite into the soft flesh. Eating watermelon is a never-ending battle against, well, water, since that is what makes up 92% of a watermelon. Better not eat it without a restroom nearby; sorry, just stating facts. You should probably have some wet wipes around too, just in case.

Or, you could drink watermelon soda. I mean, if you were already going to cut your watermelon into chunks (I was, thank you. They’re much easier to store than wedges.), then you might as well throw those chunks in the blender with a little simple syrup, a squeeze of lime, and a bit of club soda or seltzer. Watermelon soda = no wet wipes required (you probably still want to have a restroom nearby). You could definitely add a little white rum, vodka, or silver tequila in there if you want…

…because it’s your watermelon soda to do as you please. Enjoy.

Ingredients

    For the Simple Syrup
  • 1/2 cup granulated sugar
  • 1/2 cup water
  • For the sodas
  • 3 cups watermelon chunks (about 1/2 of a small seedless watermelon)
  • 1/4 to 1/2 cup simple syrup
  • 3 limes
  • cold club soda or seltzer water

Instructions

  1. Make the simple syrup: combine the sugar and the water over medium-high heat until the sugar dissolves completely. Pour into a lidded container and refrigerate until chilled.
  2. Puree the watermelon chunks in a blender or food processor until smooth.
  3. Fill 4 12-ounce glasses with ice. Divide the watermelon juice among the glasses (you'll use about 1/2 cup for each). Top each with the juice of 1/2 of a lime and 1-2 tablespoons of simple syrup. Fill the glass the rest of the way with club soda or seltzer. Stir then garnish with limes and watermelon wedges.
